Kappaphycus alvarezii adalah jenis rumput laut dari divisi Rhodophyta penghasil kappa karaginan. Karaginan merupakan senyawa polisakarida yang mengandung sejumlah unit galaktosa. Karaginan adalah senyawa hidrokoloid yang memiliki senyawa polisakarida rantai panjang yang diperoleh dari metabolisme primer rumput laut K. alvarezii. Tujuan penelitian ini yaitu mengetahui kualitas kadar air dan kadar abu karaginan dengan perbedaan suhu pengeringan. Metode penelitian yang digunakan metode ekperimental laboratoris dan analisis data dengan Rancangan Acak Lengkap (RAL). Perlakuan pada penelitian yaitu pengeringan rumput laut K. alvarezii dengan menggunakan oven dengan suhu 60 0C, suhu 70 0C dan kontrol berupa pengeringan dengan cara diangin anginkan. Perlakuan dilakukan dengan dua kali pengulangan. Hasil penelitian menunjukkan pengeringan dengan suhu 60 0C memiliki kadar air 11,06 %, kadar abu 16,30 % dan rendemen 40,51 %. Pengeringan suhu 70 0C memiliki kadar air 13,34 %, kadar abu 19 % dan rendemen 29,71 %. Berdasarkan hasil penelitian menunjukkan tidak adanya pengaruh perbedaan suhu terhadap kadar air dan kadar abu karaginan K. alvarezii.

Kappaphycus alvarezii is a type of seaweed from the Rhodophyta division that produces kappa carrageenan. Carrageenan is a polysaccharide compound containing a number of galactose units. Carrageenan is a hydrocolloid compound that has a long-chain polysaccharide compound obtained from the primary metabolism of K. alvarezii seaweed. The purpose of this study was to determine the quality of water content and ash content of carrageenan with different drying temperatures. The research method used laboratory experimental method and data analysis with a completely randomized design (CRD). The treatment in the study was drying K. alvarezii seaweed using an oven with a temperature of 60 0C, a temperature of 70 0C and control in the form of drying by wind. The treatment was done with two repetitions. The results showed that drying with a temperature of 60 0C has a moisture content of 11,06 %, ash content of 16,30 % and yield of 40,51 %. Drying at 70 0C has a moisture content of 13,34 %, ash content of 19 % and yield of 29,71 %. Based on the results of the study showed no effect of temperature differences on the water content and ash content of K. alvarezii carrageenan.
